Minted Potato, Red Onion and Feta Salad

  • 567 g (1 lb 2 1/2 oz) can new potatoes, drained
  • 1 small bunch of mint, chopped
  • 1/2 small red onion, finely sliced
  • 1 tablespoon lemon juice
  • 100 g (3 1/2 oz) feta cheese, diced or crumbled
  • Place the new potatoes in a large bowl with the mint, red onion and lemon juice and toss gently to combine.
  • Divide the salad between 2 dishes. Scatter over the feta cheese and serve.
