Mint and Chocolate Fudge Brownie Sundaes

  • 2 or 3 shop-bought chocolate fudge brownies, cubed
  • 4 scoops of mint ice cream
  • 4 scoops of chocolate ice cream
  • aerosol can of whipped cream
  • 2 tablespoons pistachio nut kernels, roughly chopped
  • 125 g (4 oz) plain dark chocolate, broken into small pieces
  • 25 g (1 oz) unsalted butter
  • 1 tablespoon golden syrup
  • 1 teaspoon peppermint extract
  • 75 ml (3 fl oz) double cream
  • To make the fudge sauce, place all the ingredients in a small saucepan over a low heat and warm until the chocolate has melted. Scrape into a bowl and leave to cool for 2–3 minutes.
  • Stir the fudge sauce until glossy, then spoon 1 tablespoon into each of 4 tall sundae glasses.
  • Drop the cubed brownies into the glasses, then top each sundae with 1 scoop of mint ice cream and 1 scoop of chocolate ice cream.
  • Drizzle another 1 tablespoon of the fudge sauce over each, then generously swirl the whipped cream over the sauce. Serve scattered with the pistachios.
