Mini Treacle Tarts

  • 350 ml (12 fl oz) golden syrup
  • 100 g (3 1/2 oz) fresh white breadcrumbs
  • grated rind of 1 large lemon
  • 1 egg, beaten
  • 8 x 8 cm (3 1/2 x 3 1/2 inch) shop- bought sweet pastry cases
  • vanilla ice cream or double cream, to serve
  • Place the golden syrup in a saucepan and heat gently until thinned in consistency. Remove from the heat and stir in the breadcrumbs, lemon rind and beaten egg. Transfer the mixture to a jug.
  • Place the pastry cases on a baking sheet, then pour the filling evenly between them. Place in a preheated oven, 180ºC (350ºF), Gas Mark 4, for 12–15 minutes or until lightly set and golden.
  • Leave to cool slightly, then serve warm with ice cream or double cream.
