Mini Tomato & Feta Omelettes

  • melted butter, for greasing
  • 4 eggs, beaten
  • 2 tablespoon chopped chives
  • 3 sun-dried tomatoes, finely sliced
  • 75 g (3 oz) feta cheese, crumbled
  • salt and black pepper

Brush a 12-hole mini muffin tray lightly with melted butter to grease.

Mix together all the remaining ingredients in a large bowl until just combined.

Pour the mixture into the greased holes and place in a preheated oven, 220°C (425°F), Gas Mark 7, for about 10 minutes until golden and puffed up. Remove from the oven and serve warm.
