  • vegetable oil, for greasing
  • plain flour, for dusting
  • 375 g (12 oz) ready-rolled shortcrust pastry, thawed if frozen and taken out of the refrigerator 15 minutes before use
  • 2 eggs
  • 200 ml (7 fl oz) milk
  • 4 slices ham, diced
  • 2 spring onions, chopped
  • 5 cherry tomatoes, chopped
  • 50 g (2 oz) Cheddar cheese, grated

Smear some oil all around the cups of 2 bun tins. Sprinkle some flour on to a work surface and unroll the pastry. Flatten it with the balls of your hands. Stamp circles out of the pastry with a cutter and place each circle in a cup of the tin, gently pressing it down with your fingertips.

Place the eggs and milk in a measuring jug and beat with a fork.

Put the ham, spring onions and cherry tomatoes in a bowl and mix together. Put a dessertspoonful of the mixture into each pastry cup.

Pour some of the egg and milk mixture into each cup. Sprinkle some Cheddar over the top. Bake the quiches in a preheated oven, 220°C (425°F), Gas Mark 7, for 20 minutes or until set and golden. Serve the quiches hot or cold.
