Mini Bacon, Prune & Stilton Grills

  • 75 g (3 oz) Stilton cheese, rind removed
  • 16 large pitted ready-to-eat prunes
  • 8 rashers of streaky bacon
  • 20 g (¾ oz) butter
  • 4 slices of bread

Cut the cheese into 16 squares, make a slit in each prune then insert a cube of cheese. Cut each rasher of bacon in half and wrap one half around each stuffed prune.

Lightly butter the slices of bread, cut each into 4 squares and arrange on a baking sheet. Place one prune on the top of each piece of bread, then secure in place with a cocktail stick. Cover and chill until required.

When ready to serve, remove the cover and bake in a preheated oven, 200°C (400°F), Gas Mark 6, for 10–15 minutes until the bread and bacon are crisp and golden and the cheese just melted. Arrange on one large serving plate or individual plates, garnished with rocket.
