Melting Chocolate Pots

  • 75 g (3 oz) dark chocolate
  • 100 g (3 1/2 oz) butter, plus extra for greasing
  • 75 g (3 oz) sugar
  • 2 eggs
  • 2 tablespoons cocoa powder
  • 25 g (1 oz) plain flour
  • icing sugar, for dusting
  • Preheat the oven to 180°C (350°F), Gas Mark 4, and butter 4 large ramekins, about 8 cm (3 1/4 inches) in diameter. Melt the chocolate and butter in a small pan over a very low heat.
  • Meanwhile, beat the sugar and eggs together, and pour in the melted chocolate. Beat in the cocoa powder and flour, and continue beating until smooth.
  • Divide the mixture between the ramekins and cook in the preheated oven for 10–12 minutes, or until crisp on top and still melting inside.
  • Remove from the oven, set aside to cool for 1–2 minutes, then serve dusted with icing sugar.
