Melted Cheesy Chicken Tortilla Wedges

  • 8 corn or wheat tortillas
  • 2 ready-cooked chicken breasts, torn into shreds
  • 2 ready-roasted red peppers, torn into strips
  • 1 red chilli, finely chopped
  • 100 g (3 1/2 oz) chorizo, thinly sliced
  • 200 g (7 oz) mozzarella cheese, thinly sliced
  • 50 g (2 oz) mature Cheddar cheese, grated
  • handful of chopped fresh coriander
  • salt and pepper
  • ready-made guacamole, to serve
  • Lay 4 tortillas on 2 large baking sheets and scatter with the chicken, red peppers and chilli. Divide the chorizo and cheese between the tortillas and sprinkle over the coriander.
  • Season to taste, place another tortilla on top of each to make a sandwich, then gently press down with your hand.
  • Place in a preheated oven, 190°C (375°F), Gas Mark 5, and cook for 7 minutes until lightly crisp and the cheese has melted. Cut into wedges, then serve with guacamole.
