Melon & Pineapple Salad

prep 10 mins, plus standing
  • ½ cantaloupe melon, peeled and deseeded
  • ½ small pineapple, peeled
  • grated rind of 1 lime
  • 2 teaspoons fructose
  • lime slices, to decorate

Dice the melon and pineapple. Add the melon and pineapple to a bowl or plastic container.

Mix together the lime rind and fructose until well combined. Sprinkle this over the fruit and stir in well; in an hour or so the fructose will have dissolved. Decorate with the lime slices and serve.
