Dust the chicken breasts with the paprika and cook on a hot griddle for 4–5 minutes on each side, then place in an ovenproof dish.
Meanwhile, heat the oil in a pan over a medium heat, add the pepper, onion and garlic and cook for 3–4 minutes. Add the chopped tomatoes, spinach, olives, capers and basil and bring to a simmer. Season to taste with salt and pepper.
Pour the sauce over the chicken and bake in a preheated oven, 200˚C (400˚F), Gas Mark 6, for 15–18 minutes, until the chicken is cooked through.
