Mediterranean Olive Chicken

  • 4 x 150 g (5 oz) chicken breasts
  • ½ teaspoon paprika
  • 1 tablespoon olive oil
  • 1 red pepper, deseeded and chopped
  • 1 red onion, chopped
  • 1 garlic clove, crushed
  • 400 g (13 oz) can chopped tomatoes
  • 100 g (3½ oz) frozen spinach, defrosted
  • 2 tablespoons green olives
  • 1 teaspoon capers
  • 1 tablespoon chopped basil
  • Dust the chicken breasts with the paprika and cook on a hot griddle for 4–5 minutes on each side, then place in an ovenproof dish.
  • Meanwhile, heat the oil in a pan over a medium heat, add the pepper, onion and garlic and cook for 3–4 minutes. Add the chopped tomatoes, spinach, olives, capers and basil and bring to a simmer. Season to taste with salt and pepper.
  • Pour the sauce over the chicken and bake in a preheated oven, 200˚C (400˚F), Gas Mark 6, for 15–18 minutes, until the chicken is cooked through.
