  • 1 large onion
  • 1 bunch of flat-leaf parsley
  • 1 bunch of coriander
  • 1 mint stalk
  • 1 kg (2 lb) minced beef
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • pinch of ras-el-hanout
  • salt
  • chopped salad vegetables, to serve

Finely mince the onion and herbs together. Transfer to a bowl with the beef, spices and salt to taste and mix thoroughly.

Form into 24 balls each about 4 cm (1½ inches) across, then flatten slightly and thread onto 6 skewers, four to a skewer. (You can also flatten them completely to form small burgers.)

Cook for 5 minutes, turning regularly, over hot coals or under a hot grill.

Serve with a chopped, mixed salad.
