Marinated Tofu with Sesame Seeds

  • 320 g (11 oz) marinated tofu cubes
  • 2 teaspoons toasted sesame seed oil
  • 500 g (1 lb) mixed stir-fry vegetables
  • 50 ml (2 fl oz) rice wine or dry sherry
  • 2 tablespoons tamari or dark soy sauce
  • 50 ml (2 fl oz) mirin
  • 1 garlic clove, finely chopped
  • 1 teaspoon grated fresh root ginger
  • 1 tablespoon palm sugar or soft light brown sugar
  • 1 tablespoon toasted sesame seeds
  • steamed Thai rice, to serve
  • Pat the tofu with kitchen paper to remove excess oil.
  • Heat the oil in wok over a medium heat, then add the mixed stir-fry vegetables and stir-fry for 2–3 minutes until starting to wilt.
  • Add the tofu, rice wine, tamari or dark soy sauce, mirin, garlic, ginger and sugar and simmer for 1–2 minutes, stirring frequently. Scatter over the sesame seeds, then serve immediately with steamed Thai rice.
