Marinated Sardines

  • 12 butterflied sardines
  • 100 ml (3 1/2 fl oz) olive oil
  • grated rind and juice of 1 lime
  • 2 tablespoons chopped basil leaves
  • 1/4 teaspoon dried chilli flakes
  • lemon wedges
  • ciabatta bread or crunchy green salad (optional)
  • Place the sardines in a shallow non-metallic dish.
  • Whisk together the olive oil, lime juice, basil and chilli flakes in a small bowl or jar and pour over the sardines. Cover with clingfilm and chill for 20 minutes.
  • Cook the sardine fillets under a preheated hot grill for 1–2 minutes on each side, until cooked through.
  • Serve with lemon wedges and ciabatta bread or crunchy green salad, if liked.
