1 shop-bought loaf cake, such as walnut or Madeira, about 300 g (10 oz)
walnut halves, to decorate
75 g (3 oz) cream cheese
25 g (1 oz) unsalted butter, softened
2 tablespoons maple syrup
1 teaspoon vanilla extract
75 g (3 oz) icing sugar
To make the frosting, place the cream cheese, butter, maple syrup and vanilla extract in a large bowl and beat with a hand-held electric whisk until very pale and creamy. Gradually sift in the icing sugar, beating well between each addition.
Use a small palette knife to spread the frosting thickly over the loaf cake, then decorate with walnut halves. Serve the cake cut into thick slices.
