Smoothie, Cocktail and Juice

  • 1 ripe mango
  • 300 ml (½ pint) pineapple juice
  • rind and juice of ½ lime
  • lime wedges, to serve (optional)

Peel the mango, remove the stone, roughly chop the flesh and put it in a freezer container. Freeze for at least 2 hours or overnight.

Put the frozen mango in a food processor or blender, add the pineapple juice and lime rind and juice and process until thick.

Pour the smoothie into 2 short glasses, decorate with lime wedges, if liked, and serve immediately.
