Mango Krispie Cakes

Ingredients
  • 50 g (2 oz) butter
  • 3 tablespoons golden syrup
  • 1 tablespoon light muscovado sugar
  • 75 g (3 oz) Rice Krispies or similar cereal
  • 75 g (3 oz) dried mango
  • 50 g (2 oz) raisins
  • 25 g (1 oz) pumpkin seeds
  • 25 g (1 oz) sunflower seeds
Directions
  • Melt the butter in a large saucepan over a low heat. Stir in the golden syrup and sugar and stir to dissolve the sugar.
  • Remove from the heat, add the Rice Krispies, mango, raisins, pumpkin seeds and sunflower seeds and stir well to mix.
  • Spoon the mixture into 16 paper cake cases and chill in the refrigerator for 15 minutes to set.
