  • 1 large mango, peeled, stoned and diced
  • 150 g (5 oz) radishes, sliced
  • 150 g (5 oz) rocket leaves
  • 2 spring onions, chopped
  • 300 g (10 oz) fresh white crab meat
  • handful of coriander leaves, chopped
  • handful of mint leaves, chopped
  • juice of 1 orange
  • grated rind and juice of 1 lime
  • 1 red chilli, deseeded, if liked, and chopped
  • 5 tablespoons olive oil
  • salt and pepper

Make the dressing by mixing together all the ingredients in a bowl, then season well.

Arrange the mango, radishes and rocket on a serving plate and toss with 1 tablespoon of the dressing.

Scatter over the spring onions, crab meat and herbs. Drizzle over the remaining dressing and serve immediately.
