75 g (3 oz) ready-made meringues, broken into pieces
2 x 298 g (10 oz) cans mandarin segments in juice, drained
Whip the cream with the orange rind, if using, in a large bowl until soft peaks form.
Fold in the meringues and mandarin segments, reserving a little of each to scatter over the tops. Spoon the mixture into bowls or sundae-style glasses and serve scattered with reserved meringue and mandarin.
