Lemony Poppy Seed Frosted Muffins

Ingredients
  • 4 shop-bought jumbo lemon and poppy seed muffins
  • sugared lemon slices, to decorate
  • 100 g (3 1/2 oz) cream cheese
  • 25 g (1 oz) unsalted butter, softened
  • 75 g (3 oz) icing sugar, sifted
  • 1 teaspoon lemon juice
  • 1 teaspoon finely grated lemon rind
Directions
  • To make the frosting, place all the ingredients in a large bowl and beat together until thick and smooth.
  • Spoon a large dollop of icing on top of each muffin and decorate with the lemon slices.
