Special Diet

Ingredients
  • grated rind of 1 lemon
  • 75 g (3 oz) ready-to-eat dried dates, chopped
  • 75 g (3 oz) unsalted pistachios, chopped
  • 75 g (3 oz) flaked almonds, chopped
  • 125 g (4 oz) soft light brown sugar
  • 150 g (5 oz) millet flakes
  • 40 g (1½ oz) cornflakes, lightly crushed
  • 400 g (13 oz) can condensed milk
  • 25 g (1 oz) mixed seeds, such as pumpkin and sunflower
Directions

Simply place all the ingredients in a large bowl and mix together. Spoon into a 28 x 18 cm (11 x 7 inch) baking tin and place in a preheated oven, 180°C (350°F), Gas Mark 4, for 20 minutes.

Remove from the oven, leave to cool, then mark into 15–20 squares and chill until firm. If you fancy, you could drizzle the top with some melted chocolate once the squares are cooled.
