Lemon Meringue Fools

Ingredients
  • 175 ml (6 fl oz) double cream
  • 150 g (5 oz) mascarpone cheese
  • 25 g (1 oz) icing sugar
  • 1/2 teaspoon lemon extract
  • 150 g (5 oz) natural yogurt
  • 75 g (3 oz) lemon curd, plus 4 heaped teaspoons
  • 4 meringue nests, broken into small pieces
Directions
  • Whip the cream, mascarpone, icing sugar and lemon extract in a large bowl with a hand-held electric whisk until it forms soft peaks. Fold in the yogurt and the 75 g (3 oz) lemon curd.
  • Spoon the remaining 4 teaspoons lemon curd into 4 tall serving glasses, then spoon in the lemon fool. Chill for 10 minutes.
  • Scatter the broken meringues over the fools and serve immediately.
