Lemon and Turkish Delight Syllabub

  • 2 tablespoons rose water
  • 50 g (2 oz) caster sugar
  • 400 ml (14 fl oz) whipping cream
  • 2 tablespoons lemon juice
  • 100 g (3½ oz) Turkish Delight, diced
  • grated rind of 1 lemon
  • Place the rose water in a large bowl and stir in the sugar until it dissolves.
  • Add the cream and whip until soft peaks form. Stir in the lemon juice and Turkish Delight and divide between 4 glasses to serve.
  • Serve sprinkled with the lemon rind.
