Meals and Courses

  • 500 g (1 lb) minced lamb
  • 2 teaspoons ground cumin
  • 2 teaspoons thyme leaves
  • 1 teaspoon chilli powder
  • grated rind of ½ lemon
  • salt and black pepper
  • 200 g (7 fl oz) Greek yogurt
  • ¼ cucumber, grated
  • handful of mint, chopped
  • juice of ½ lemon
  • 1 garlic clove, crushed
  • 1 large red onion, finely sliced
  • 2 large tomatoes, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar

Mix together the lamb, cumin, thyme, chilli powder and lemon rind in a bowl and season well. Divide the mixture into 8 and shape around 8 metal skewers.

Place the skewers under a hot grill or on the barbecue for about 6–7 minutes, turning occasionally, until golden and cooked through.

Combine all the tzatziki ingredients in a serving dish. Mix together all the salad ingredients in a serving bowl.

Serve the kofte with the tzatziki, red onion salad and toasted gluten-free bread or steamed rice, if liked.
