Ingredients
  • 1 litre (1¾ pints) water
  • 200 g (7 oz) lamb, cubed
  • 1 onion, sliced in fine strips
  • ¼ teaspoon pepper
  • ½ teaspoon ground turmeric
  • 4 carrots, trimmed and cubed
  • 2 leeks, trimmed and cubed
  • 3 potatoes, cubed
  • 3 turnips, trimmed and cubed
  • 2 tomatoes, cubed
  • 1 bunch of coriander, snipped
  • 1 bunch of flat-leaf parsley, snipped
  • 50 g (2 oz) vermicelli
  • 1 tablespoon tomato paste
  • 20 g (¾ oz) butter
  • salt
Directions

Bring the water to the boil in a large saucepan, then add the meat, onion, pepper, turmeric and salt to taste. Leave to cook for 20 minutes.

Add all the prepared vegetables. Add the snipped coriander and parsley to the pan.

Leave to simmer for a further 12 minutes until the vegetables are cooked, then add the vermicelli and tomato paste and continue to cook for 8 minutes.

Stir in the butter just before serving.
