Lamb and Chorizo Burgers with Roasted New Potatoes

  • 500 g (1 lb) minced lean lamb
  • 250 g (8 oz) cooking chorizo, skin removed
  • 1 garlic clove, crushed
  • 2 tablespoons chopped parsley
  • 2 tablespoons olive oil
  • 4 slices of ciabatta bread, toasted
  • 4 tablespoons fresh ready-made tomato salsa
  • 625 g (1 lb 4 oz) new potatoes, halved if large
  • 2 tablespoons olive oil
  • 2 rosemary sprigs, leaves stripped and roughly chopped
  • salt and pepper
  • Place the potatoes in a large roasting tin and drizzle over the oil, then add the rosemary and season. Roast in a preheated oven, 200°C (400°F), Gas Mark 6, for 25 minutes until tender and golden.
  • Meanwhile, place the lamb in a bowl and crumble in the chorizo. Add the garlic and parsley and mix well. Using your hands, shape into 4 large burgers, pressing the mixture together firmly.
  • Heat the oil in a large frying pan or griddle pan, add the burgers and cook over a medium heat for 10 minutes, turning occasionally, until browned and cooked through.
  • Place the burgers on the toasted ciabatta slices and top each with a spoonful of salsa. Serve with the roasted new potatoes.
