King Prawn Soba Noodles with Sweet and Sour Dressing

  • 300 g (10 oz) raw peeled king prawns
  • 175 g (6 oz) soba noodles
  • ½ cucumber, deseeded and finely shredded
  • 1–2 spring onions, thinly shredded
  • small bunch of coriander leaves
  • blanched peanuts, to scatter
  • 2 tablespoons lime juice
  • 1 teaspoon fish sauce
  • 1 tablespoon caster sugar
  • 2 tablespoons sweet chilli sauce
  • Arrange the prawns in a steamer over a pan of gently simmering water and steam for 3–5 minutes, until pink and cooked. Rinse under cold water to cool and set aside.
  • Bring a large pan of water to the boil and cook the noodles for 5–7 minutes, or according to the packet instructions, until tender. Drain and rinse immediately under cold water.
  • Meanwhile, combine the dressing ingredients and stir until the sugar has dissolved.
  • Toss the noodles in half the dressing, then combine with the cooked prawns, cucumber, spring onions and coriander.
  • Heap into dishes and scatter with the peanuts. Serve drizzled with extra dressing, as desired.
