• 150 ml (¼ pint) natural yogurt
  • 1 teaspoon chilli powder
  • 2 teaspoons grated fresh root ginger
  • 2 garlic cloves, crushed
  • 2 tablespoons chopped fresh coriander
  • 1 tablespoon sunflower oil, plus extra for oiling
  • 8 lamb loin chops
  • salt and pepper
  • pilau rice
  • cherry tomato, onion and coriander salad

Mix together the yogurt, chilli powder, ginger, garlic, coriander and oil in a large bowl and season with salt and pepper.

Add the chops to this mixture and coat them thoroughly. Cover and marinate for at least 3 hours (ideally 10 hours) in the refrigerator, if time allows.

Place the chops on a lightly oiled grill pan. Cook under a preheated hot grill for 4–6 minutes on each side or until tender. Serve with pilau rice and a cherry tomato, onion and coriander salad.
