Put the chicken wings in a glass or ceramic dish. In a small bowl, whisk together the oil, jerk seasoning mix, lemon juice and salt, pour over the wings and stir well until evenly coated. Cover and leave to marinate in the refrigerator for at least 30 minutes or overnight.
Arrange the chicken wings on a grill rack and cook under a preheated grill, basting halfway through cooking with any remaining marinade, for 6 minutes on each side or until cooked through, tender and lightly charred at the edges. Increase or reduce the temperature setting of the grill, if necessary, to ensure that the wings cook through. Garnish with the chopped parsley and serve immediately with lemon wedges for squeezing over.
