Special Diet

  • 2 ripe avocados
  • juice of 2 small limes
  • 1–2 teaspoons wasabi paste, to taste
  • 4 spring onions, finely chopped
  • 1 tablespoon sesame seeds, toasted
  • 1 teaspoon Japanese rice mirin
  • 1 teaspoon finely chopped pickled ginger
  • sesame seeds, for sprinkling
  • prawn or rice crackers, to serve

Cut the avocados in half and remove and discard the stones. Peel off the skin and roughly chop the flesh. Place in a bowl and roughly mash with a fork.

Stir in the lime juice, wasabi, spring onions, sesame seeds and mirin.

Transfer to a serving bowl and scatter over the pickled ginger and sesame seeds. Serve immediately, with crackers for dipping.
