Italian Vegetable Kebabs

  • 2 red peppers, cored, deseeded and chopped
  • 1 yellow pepper, cored, deseeded and chopped
  • 2 courgettes, cut into thick slices
  • 1 large red onion, cut into wedges
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons torn basil leaves
  • salt and pepper
  • Place the chopped vegetables in a large bowl and toss in the olive oil, lemon juice, basil and salt and pepper.
  • Thread the vegetables on to metal skewers and grill or barbecue over a medium heat for 10–12 minutes, turning occasionally, until cooked. Serve immediately.
