Instant Raspberry Sorbet

  • 300 g (10 oz) frozen raspberries
  • 2 tablespoons caster sugar
  • 2 tablespoons water
  • 1 tablespoon crème de framboise (raspberry liqueur) (optional)
  • fresh raspberries, to serve
  • Place the raspberries, sugar, measurement water and crème de framboise, if using, in a food processor. Blitz for 2–3 minutes until all the ingredients are blended and start to come together.
  • Serve scoops of sorbet immediately in bowls with fresh raspberries or place in a freezerproof container and freeze until ready to use.
