Place the apples in a saucepan with the butter, sugar, lemon juice and measurement water. Cover and simmer for 8–10 minutes, until softened.
Melt the butter for the crumble in a frying pan, add the breadcrumbs and stir-fry until lightly golden, then add the pumpkin seeds and stir-fry for a further 1 minute. Remove from the heat and stir in the sugar.
Spoon the apple mixture into bowls, sprinkle with the crumble and serve with cream or ice cream.
