Huevos Rancheros

Ingredients
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 red peppers, deseeded and diced
  • 2 garlic cloves, crushed
  • ¾ teaspoon dried oregano
  • 400 g (13 oz) can chopped tomatoes
  • 4 eggs
  • 20 g (¾ oz) feta cheese, crumbled
  • 4 toasted gluten-free pitta breads, to serve
Directions
  • Heat the oil in a frying pan over a medium heat, then add the onion, peppers, garlic and oregano and cook for 5 minutes.
  • Add the tomatoes and cook for a further 5 minutes. Pour the tomato mixture into a shallow ovenproof dish and make 4 dips in the mixture.
  • Crack the eggs into the dips, sprinkle with the feta and cook under a preheated hot grill for 3–4 minutes.
  • Serve with toasted pitta breads.
