Hot Dogs with Barbecue Sauce

  • 2 large onions, sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon chopped thyme
  • 4 large pork sausages
  • 4 hot dog rolls, halved
  • a little butter
  • 4 tablespoons Barbecue Sauce (see page 46)
  • salt and black pepper

Toss the onions with the oil, thyme, salt and pepper, then cook on the flat plate of a hot gas barbecue for 15—20 minutes until soft and golden. (For a charcoal barbecue, use a preheated ridged grill pan instead.)

Meanwhile, cook the sausages on the barbecue until lightly charred and cooked through, about 10 minutes.

Butter the bread rolls and fill with the sausages, onions and a tablespoon of barbecue sauce.
