Hot and Spicy Steak and Rocket Ciabattas

  • 2 large sirloin steaks
  • olive oil, for brushing
  • 2 large ciabatta loaves
  • 2 tablespoons chilli sauce
  • 100 g (3 1/2 oz) shop-bought garlic mayonnaise
  • small handful of wild rocket leaves
  • salt and pepper
  • Season the steaks and brush with a little oil. Place on a preheated smoking-hot ridged griddle pan and cook for 2–3 minutes on each side or until cooked to your liking.
  • Meanwhile, put the ciabatta loaves on a baking sheet and place in a preheated oven, 200°C (400°F), Gas Mark 6, for 4–5 minutes or until warmed through.
  • Mix together the chilli sauce and garlic mayonnaise in a bowl. Split the ciabatta loaves into half horizontally, spread the halves with the spicy mayonnaise and top the bases with some rocket leaves.
  • Thinly slice the steaks, divide between the bases and top with the ciabatta lids. Cut each ciabatta into 2 and serve.
