Slash the chicken breasts 3–4 times with a sharp knife, then place in a baking dish.
Mix together all the ingredients for the spiced honey and spoon over the chicken. Toss until well coated.
Put the chicken in a preheated oven, 220°C (425°F), Gas Mark 7, for 20–25 minutes or until the meat is cooked through and the skin is crispy.
Leave the chicken to rest for a few minutes before serving with chunky potato chips, if liked.
