Honey Mustard Salmon

  • 4 salmon fillets, about 150 g (5 oz) each
  • olive oil, for oiling
  • 2 tablespoons wholegrain mustard
  • 2 tablespoons clear honey
  • handful of dill, chopped
  • salt and pepper
  • Place the salmon on a lightly oiled baking tin and season. Mix together the mustard, honey and dill and drizzle over the salmon.
  • Place in a preheated oven, 220°C (425°F), Gas Mark 7, for 8 minutes or until cooked through. Serve with some new potatoes and a cucumber salad.
