Lay the salmon in a lightly greased baking tray. Stir the orange juice into the honey and brush the mixture over the salmon. Cut the orange and lemon rind into thin strips and scatter them over the salmon. Leave to marinate in the refrigerator for 30 minutes.
Season the salmon with salt and pepper, then bake in a preheated oven, 200°C (400°F), Gas Mark 6, for 20 minutes, until cooked through.
Transfer the salmon on to a serving platter and garnish with lemon wedges and watercress sprigs. Serve with new potatoes, if liked.
