Homemade Fish Fingers

Ingredients
  • 3 tablespoons plain gluten-free flour
  • 1 large egg, beaten
  • 30 g (1¼ oz) gluten-free breadcrumbs
  • 25 g (1 oz) polenta
  • 500 g (1 lb) cod fillet, cut into 8 thick pieces
  • 3 tablespoons sunflower oil
  • 200 g (7 oz) frozen peas
  • 2 tablespoons butter or olive oil
  • 4 eggs
Directions
  • Place the flour and the beaten egg in two separate shallow bowls, then mix the breadcrumbs and polenta together in a third bowl.
  • Gently toss the pieces of fish first in the flour, then in the egg and finally in the breadcrumb and polenta mixture to coat.
  • Heat the sunflower oil in a frying pan over a medium heat and cook the fish fingers carefully for 5–6 minutes, turning occasionally, until golden.
  • Meanwhile, cook the peas in boiling water for 2–3 minutes.
  • Heat the butter or olive oil in another frying pan and fry the eggs to your liking.
  • Drain the peas and serve with the fish fingers and fried eggs.
