Herby Goats’ Cheese Pasta

Ingredients
  • 325 g (11 oz) fresh reginette pasta
  • 150 g (5 oz) soft goats’ cheese
  • handful of basil leaves, chopped, plus extra leaves to serve (optional)
  • handful of flat-leaf parsley, chopped, plus extra leaves to serve (optional)
  • handful of mint leaves, chopped, plus extra leaves to serve (optional)
  • salt and pepper
Directions
  • Cook the pasta in a large saucepan of salted boiling water according to the pack instructions until al dente.
  • Meanwhile, mash together the goats’ cheese and herbs in a bowl and season lightly.
  • Drain the pasta, reserving a little of the cooking water, and return to the pan. Stir through the herby cheese mixture, adding a little cooking water to loosen if needed. Spoon into bowls and serve sprinkled with extra herb leaves, if liked.
