Herby Bulgar and Chickpea Salad

  • 400 g (13 oz) can chickpeas, drained
  • 100 g (3 1/2 oz) cooked bulgar wheat
  • 200 g (7 oz) roasted red peppers (from a jar), drained and chopped
  • large handful chopped dill
  • large handful chopped coriander
  • 6 tablespoons olive oil
  • juice of 1 orange
  • 1 teaspoon ground cumin
  • salt and pepper
  • Place the chickpeas in a bowl with the bulgar wheat and peppers. Add the dill and coriander.
  • Whisk together the olive oil, orange juice and cumin and season well. Pour the dressing over the salad, toss to mix well and serve immediately.
