Herb-Roasted New Potatoes

  • 2 tablespoons olive oil
  • 1 kg (2 lb) new potatoes, scrubbed
  • 4 garlic cloves, peeled but left whole
  • 2 rosemary sprigs
  • 2 thyme sprigs
  • 1 sage sprig
  • sea salt and black pepper

Put the oil into a roasting tin and place in a preheated oven, 200°C (400°F), Gas Mark 6, for 5 minutes until hot.

Add the potatoes, garlic cloves and herb sprigs, season well with sea salt and pepper and turn to coat in the oil.

Return to the oven and roast for 40–45 minutes, turning occasionally, until the potatoes are crisp and tender. Serve hot.
