Herb Butter Squid

  • 125 g (4 oz) butter
  • grated rind of 1 lime and juice of 1/2 lime
  • 2 tablespoons chopped mint leaves
  • 2 tablespoons chopped basil leaves
  • 1 tablespoon olive oil
  • 500 g (1 lb) squid rings
  • Mix together the butter, lime rind, mint and basil in a small bowl. Stir in the lime juice.
  • Heat the olive oil in a large frying pan and cook the squid rings for 1–2 minutes on each side. Remove the squid from the pan and place them in a hot dish.
  • Dot the squid with the herb butter and lightly toss together. Serve immediately.
