Healthy Green Bean and Broccoli Salad

  • 200 g (7 oz) mixture of broccoli florets and fine green beans
  • 400 g (13 oz) canned borlotti or aduki beans, rinsed and drained
  • 1 celery stick, finely chopped
  • 1/2 small red onion, finely sliced
  • 1 small ripe avocado, stoned, peeled and diced
  • 1 tablespoon sunflower seeds
  • 1 tablespoon lime or lemon juice
  • 2 tablespoons groundnut or vegetable oil
  • 1 tablespoon light soy sauce
  • Cook the green beans and broccoli in a pan of lightly salted boiling water for 2–3 minutes until lightly cooked. Drain and cool under cold water.
  • Meanwhile, combine the canned beans in a bowl with the celery, onion and avocado.
  • Whisk together the dressing ingredients in a small bowl.
  • Add the cold beans to the salad and gently fold through the dressing. Spoon into a serving dish and scatter with the sunflower seeds.
