Grilled Sardines with Pan-Fried Lemon Potatoes

  • 625 g (1¼ lb) new potatoes, thickly sliced
  • 1 tablespoon olive oil
  • 12 sardines, cleaned and gutted
  • grated zest and juice of 1 lemon
  • 2 tablespoons chopped parsley
  • Cook the potatoes in boiling water for 12–15 minutes, until tender.
  • Heat the oil in a frying pan over a medium heat, add the potatoes and cook for 6–8 minutes, turning regularly, until golden.
  • Meanwhile, place the sardines on a grill tray and pour over the lemon juice. Cook the sardines under a preheated hot grill for 2–3 minutes on each side.
  • Toss the lemon zest and chopped parsley into the potatoes and serve with the grilled sardines.
