Grilled Sardines with Mango and Lime Salsa

  • 1 teaspoon finely grated fresh root ginger
  • finely grated rind and juice of 1 lime
  • 1 small bunch of coriander, roughly chopped
  • 1 tablespoon groundnut oil
  • 1/2 large red chilli, deseeded and chopped
  • 12–16 fresh sardines, scaled, gutted and cleaned
  • 1 firm, ripe mango, peeled, stoned and diced
  • 4 tomatoes, deseeded and diced
  • 1 spring onion, finely chopped
  • 2 tablespoons lime juice
  • 1/2 large red chilli, deseeded and chopped
  • Place the ginger, lime zest and juice, coriander, oil and half the chilli in a mini chopper and blend to make a rough paste. Alternatively, use a pestle and mortar.
  • Score small slits into the sardine flesh, then rub the paste all over, massaging it into the slits.
  • Place the sardines onto a grill rack and slide under a hot preheated grill for 4–5 minutes or until cooked and slightly blackened, turning once.
  • Meanwhile, make the salsa by combining all the ingredients in a small bowl and mixing well.
  • Serve the sardines straight off the grill with the salsa.
