Grilled Mackerel with Lemon, Chilli and Coriander

  • grated rind and juice of 1 lemon
  • 1 green chilli, finely chopped
  • handful of coriander, chopped, plus extra to garnish
  • 1 tablespoon vegetable oil, plus extra for oiling
  • 4 medium mackerel, scaled and gutted
  • salt and pepper
  • Mix together the lemon rind and juice, chilli, coriander and oil. Using a sharp knife, make 3 shallow slashes across either side of each fish. Season and rub all over with the lemon mixture.
  • Place the fish in a lightly oiled grill pan and cook under a preheated hot grill for about 7 minutes. Turn over and cook for a further 5 minutes, or until the fish is just cooked through. Scatter over chopped coriander and serve with lemon wedges, chapatis and a tomato salad.
