Grilled Lemon and Mustard Sardines

  • small handful of parsley leaves, chopped
  • 1 tablespoon wholegrain mustard
  • juice of 1 lemon
  • 8 sardines, boned, cleaned and gutted
  • 2 tablespoons olive oil
  • lemon halves, to serve
  • Mix together the parsley, mustard and lemon juice in a bowl, then spoon into the sardine cavities. Brush the fish with the oil.
  • Cook under a preheated hot grill for 4 minutes on each side or until cooked through. Serve with lemon halves.
