Grilled Hake Steaks with a Lemony Bacon Dressing

  • 2 tablespoons olive oil
  • 4 hake steaks, about 175 g (6 oz) each
  • 25 g (1 oz) butter
  • 2 streaky bacon rashers, finely sliced
  • finely grated rind and juice of 1 lemon
  • handful of flat leaf parsley, chopped
  • salt and pepper
  • Rub 1 tablespoon of the oil over the hake steaks and season. Cook in a smoking-hot griddle pan for 5 minutes. Turn over and cook for a further 3 minutes until just cooked through.
  • Meanwhile, heat the remaining oil in a frying pan with the butter. Add the bacon and cook for 5–7 minutes until crispy. Stir in the lemon rind and juice and the parsley. Place the fish on serving plates and spoon over the sauce.
