Grilled Gammon with Apple and Brie

  • 1 tablespoon olive or vegetable oil
  • 4 thick trimmed gammon steaks, about 175 g (6 oz) each
  • 2 tablespoons apple sauce, plus extra to serve (optional)
  • 125 g (4 oz) Brie, sliced
  • 1 teaspoon dried thyme
  • green salad, to serve (optional)
  • Rub the oil over the gammon steaks and arrange on the rack of a foil-lined grill tray. Cook under a grill preheated to a medium-hot setting for 4–5 minutes on each side until cooked through.
  • Spread the apple sauce thinly over the grilled gammon and top with the sliced Brie and dried thyme. Return to the grill for a further 2–3 minutes until the cheese has melted and is golden.
  • Serve with extra apple sauce and a green salad, if desired.
